Alu paratha

Alu paratha
The most famous stuffed paratha. Very popular breakfast in North India. It is served with dollops of butter, thick curds and pickle.

Ingredients
For the alu filling
Potatoes - 2 -3 medium sized
Red chilli powder - 1 tsp
Green chilli - 3 -4
Coriander powder - 2tsp
Cumin powder - 1tsp
Aamchur powder - 1tsp
Garam masala powder -1tsp
Turmeric powder - a pinch
Salt -for taste
For the paratha
Wheat flour - 2 çups
Ghee or butter -2 tsp for kneading
Salt -1/2 tsp
Water - for making the dough
Method
Making the filling
Boil and peel the potatoes. Mash them finely. Add the garam masala powder, coriander powder, cumin powder and red chilli powder. Add the finely chopped green chillies. Also add turmeric powder,salt and aamchur powder (you can add 2tsp of lime juice if aamchur powder is not available). Mix it well. Taste it and add any spice powder as per your taste preference.
Making the dough
Take wheat in a big bowl. Add 2 tsp of ghee/ butter and salt. Using warm water knead the dough. It should be smooth and soft.
Making the alu paratha
Divide the dough into medium sized balls. Roll 1 ball into a circle. Put alu filling in middle. Keep the sides free. Now pinch the edges from all directions to the center. Sprinkle with wheat and roll it to the size of chapati.
Heat the dosa tawa and heat the paratha on both sides. Use ghee on both sides.
Serving suggestion
1. Serve with pickle and thick curds
2. Serve hot

1. You can finely chop onions and add
2. You can also add grated cheese or paneer
3. To make mix veg paratha, you can add boiled and mashed carrots, peas etc
