Solkhadi
This is a famous refreshing drink in Maharastrian and Goan cuisine. This drink is made using kokum (punarpuli/ Garnicia Indica). You may also like recipe of other refreshing drinks for summer like

Ingredients
Dried kokum - 10 - 15
Coconut (grated) - 1/2 cup
Salt - for taste
Sugar - 1 pinch
Garlic - 5 - 8 cloves
Jeera - 1 tsp
Green chilli - 2
For tempering and seasoning
Ghee - 1 tsp
Cumin seeds - 1 tsp
Curry leaves - 1 tsp
Asofoetida - 1 pinch
Method
Wash and soak the dried kokum overnight. Discard the kokum and keep the water.
Grind the coconut milk with very less water in a blender. When it blends to become a paste, drain it using a sieve and remove milk from the paste and keep aside. 'Milk' can again be extracted from the dried mix.
In a mortar and pestle take cumin seeds, green chillies and garlic. Make it into paste.
In a vessel take kokum extract and add the coconut milk to it. Also add the green chilli, garlic paste. Add 1 pinch of sugar and salt. Keep it aside till you prepare the tempering.
Take a kadai with ghee. Heat it and add cumin seeds and allow it to crackle. Add asofoetida and curry leaves. Remove it from heat and add it to the mix. Garnish with coriander leaves and mint leaves.
You can have it immediately or refrigerate and have it cold.
