Coconut rice
This is one of the very simple rice, I learnt this from my mother in law. This is commonly prepared in Tamil Nadu. This is a great picnic lunch as you can eat it with chips or ribbon pakoda or any savoury like that. It becomes a little dry if the coconut is less. But can be eaten with any kuzhambu, sambhar or thokku. You may also like recipe of other mixed rice like

Ingredients
Rice - 1.5 cup boiled. (Each grain should be seperate.)
Coconut - 1cup grated and tightly packed
Green chilli - 2 finely chopped
Salt - for taste
For tempering
Mustard seeds - 1 tsp
Urad dal - 1 tsp
Chana dal - 2 tsp
Cashew nuts - 10 to 15 broken
Red chilli - 2
Curry leaves - 2tsp finely chopped
Oil - 2 tbsp
Method
First keep the rice ready. Cook by adding a pinch of salt and few drops of oil. The grains of the rice will be separate. Put it in a large plate and allow it to cool
Take a large kadai with 2 tbsp of oil. Add mustard seeds and allow it to splutter. Add urad dal, chana dal, red chilli and cashew seeds. These have to turn golden brown. Add finely chopped curry leaves and green chillies. Now add coconut and roast it till it just starts to become brown. Add salt for taste. Now remove the kadai from heat and add the boiled rice.
Serve it with potato chips or some spicy kuzhambu.
